    Why practise missing numbers?

A child who can answer 7 × __ = 42 really knows the fact, not just a chant. It is also exactly how division is introduced in Cambridge Primary Stage 3 and 4.

My child finds these hard. What helps?

Ask "how many sevens make 42?" and let them count up in sevens on their fingers at first. Then try the same table as a normal multiplication sheet and come back.
